Homemade Pickled Jalapeños!
Jalapeños, tsp of pepper corns, garlic and white vinegar.
That is all and that was easy!
and the other half of the butternut squash goes to….Our little Dare Bear!

Chicken thighs seasoned with garlic powder and pepper topped with roasted grape tomatoes that were tossed in olive oil and seasoned with oregano, sauteed broccoli rabe and garlic sided with butternut squash and onion.
Q:Oh my goodness! I started following you back in your "hardcore work out days" and you were one of the first blogs I started to follow! You gave me amazing inspiration. I stopped using tumblr on my laptop as often and have missed a lot of stuff on it and I never saw you were pregnant. I am very happy for you! I’m slowly starting to get back to my regular healthy routine and I feel really good about it. Baby Dare is amazing and is my inspiration to be a healthy role model. Thanks for the kind words. :)
Cauliflower and veggie soup
Made a yummy batch of soup today. NYC is now getting chilly and I thought this would be a good healthy start getting back into my health routine.
- One Carrot
- One stalk of celery
- One whole onion
- Two cloves of garlic
- One whole head of cauliflower
- One can of Fat free, low sodium Chicken broth (or vegetable broth)
- Two tablespoons of EVOO
- 1/4 cup of milk (optional)
- Salt and pepper
- Garlic Powder
Sauteed the first four ingredients in a deep pan for five minutes with evoo and added the seasonings. Tossed in the cauliflower and broth and let simmer for 30 minutes covered.
Once all veggies were fully cooked and soft, I tossed them in my blender to get the soup consistency and added just less than a 1/4 cup of whole milk.
Poured it into my pretty bowl and garnished with scallions.
