Baby spinach topped with tuna, red onion, green pepper, avocado, cucumber with a balsamic vinaigrette (I consider paleo) and some fresh orange.

Last night I was treated to a delicious dinner prepared by my lovely boyfriend. It was prepared with my body’s post-pregnancy needs in mind.
First, was crispy cayenne cod fillet that was baked using a little evoo. The fish was only lightly breaded on the top in an effort to keep this traditionally heavy dish light. The breading contained the perfect amount of cayenne - a natural metabolism booster that aides in digestion, and also works to eliminate bad cholesterol in your bloodstream. Lime was used to coat the fish before breading to compliment the spicy kick. Cod is rich in iron, which my body is currently lacking given that I’m breastfeeding the little one (breastfeeding burns 500 cals a day, by the way!). Low fat, high protein - just what I’ve needed for my diet over these demanding past few weeks.
Second was an amazing pureed vegetable soup. My man enjoys leading a somewhat paleo lifestyle, and thus used a handful of root vegetables in this mix. High fiber veggies including cabbage, leeks, and carrots, and the addition of garlic made for a deliciously healthy meal. Vegetable broth was used, but he chose an organic low sodium version and used it sparingly. I looked past the use of the broth given the fact that my bowl of soup contained about 9 servings of great vegetables. And, the heart-healthy cod loaded me up with vitamins b12 and b6, along with the Omega 3 fatty acids.
Last was a fruit smoothie made up of young coconut water (fresh), apples, strawberries and blueberries. All help with a boosted fiber content, and the coconut added potassium, protein, and even more iron.
A bowl full of warm veggies and a light cod fillet make of one happy girl!! :)
I would like to introduce you all to our new beautiful addition Darienne Rene Close!
She was born on Saturday February 23rd 2013 at 7:21pm. 9lbs and 22 inches long. Healthy and amazing! She is honestly the most beautiful thing I’ve ever seen. We are finally home as a family planning out what the three of us are going to accomplish together and I can’t wait to get started!
I’ve got a healthy diet/fitness plan in the works and I’ll keep you all posted. BTW- I only gained 35lbs while pregnant! ;) I’ll be weighing myself soon to start the next chapter.

The exchange of Christmas stockings and a lovely sit down homemade breakfast on Christmas morning. <3
(not the healthiest breakfast but it’s christmas and I don’t regret a bite!)
French toast, bananas, strawberries, cantaloup, orange juice, coffee, Bry’s “Dirty Eggs” that consists of summer sausage (found in Bry’s stocking), cheddar and eggs. Also added some very soft oatmeal raisin cookies.
I also just discovered the Wild Main Blueberry syrup which was amazing! And we also used some pure new hampshire maple syrup which was a gift from Santa. ;)

Before…
Went out for breakfast with Bry and got the egg white omelet filled with spinach and goat cheese sided with yummy home fries and freshly squeezed orange juice. I almost cried a little it was so delicious.
